These two luxurious spirits are the perfect Christmas gift for that special loved one who appreciates the whiskeys’ intensely complex flavours. The two expressions are triple distilled in wine-seasoned oak barrels all of which have been meticulously selected by Bushmills’ Master Blender, Alex Thomas.

The 25-Year-Old is matured between four to six years in ex-sherry and Bourbon casks, and then has spent up to 21 years in Ruby Port casks, resulting in layers of intense, dark fruit flavours, luxurious honey sweetness and gently toasted wood. Meanwhile, the 30-Year-Old was matured for 14 years in ex-sherry and Bourbon casks and finished in Pedro Ximénez sherry casks for 16 years, creating a sublime whiskey characterised by deep, signature sherry aromas and enticing fig, raisin and praline richness.

Bushmills Sager and Wilde Cake Whisky

For those seeking something a little more adventurous than tea and cake this Christmas, Bushmills Irish Whiskey and Sager + Wilde have put their heads together to develop an exquisite new whiskey cocktail and cake pairing that explores the warm, rich, earthy flavours of the season.

The new cocktail – crafted using Bushmills 10-Year-Old Single Malt Irish Whiskey, Amontillado sherry, Angostura bitters and porcini maple syrup – was designed to perfectly set off an indulgent Spiced Pear and Walnut Cake served with Bushmills Butterscotch. The delicious pairing celebrates the smooth, honeyed flavours and chocolate and vanilla characteristics that make the 10-Year-Old so enjoyable when sipped neat – due to influences of  an extended sherry/bourbon cask maturation - with a sweet treat.

L’Atelier closed its famous two Michelin-starred Covent Garden site back in 2018, just nine months after the founder and one of the most decorated chefs of all time, Joël Robuchon, sadly passed away. Well, now it’s back.

Now in Mayfair, Italian born Andrea Cofini takes charge as Head Chef having previously headed up Robuchon Shanghai and the sister L’Atelier in Paris since joining in 2014, both of which hold two stars. Accomplished in the Robuchon style, the new Clarges Street L’Atelier carries the same three principles as before – excellence, simplicity, and consistency, principles that apply to every stage of dining here.

First, the hospitality, where from the first step into the restaurant to the last step leaving, the hospitality and attention to detail of the staff brings a friendly and peaceful feel to the countertop open kitchen experience. The charming art deco dining room is beautifully designed, but it’s the cuisine that is front and centre, and the absolute star of the show.

Classic French gastronomy meets touches of Asian influence from Cofini’s Shanghai stint. Expect to see kambu, seaweed, special vinegars and alike, as well as world renowned Robuchon favourites like the purée de pomme de terre, AKA the best mashed potato in the world, sea bream carpaccio and roast quail with foie gras. Seasonality is highly valued too, so expect an array of different dishes.

Let’s not forget that Robuchon bucked the trend in French fine dining with this theatrical chef’s workshop, where à la carte ordering isn’t frowned upon, and guests aren’t limited to the tasting menu. It is still very much there, with the Discovery menu offering a mouthwatering journey from caviar to lobster, to sea bass, right through to lemon and cucumber jelly and roasted figs with mascarpone foam. It’s an expansive selection, with the quality of a tiny, set menu.

Just 1% of wine producers in the US are still black-owned, and as an industry steeped in history, inheritance and the importance of connections, it is a difficult club to break into.

We think winemaking would be all the better and richer for a more diverse and inclusive philosophy, and supporting black-owned brands producing exceptional wine is one of the best ways to contribute.

If you walked past 30 Walter Street, New York throughout the 1830s, you’d have seen and smelt a dilapidated five-story townhouse, and you’d probably be witnessing the closing down of yet another failed business there.

People that weren’t prepared to give up on it however were The Dead Rabbit gang, who saw the potential of this Manhattan haunt and fought to own their poverty-stricken slum. Remembering the fighting spirit of their leader, boxer, businessman, politician and criminal John Morrissey, The Dead Rabbit opened in 2013 and has overcome a hurricane and a fire to expand and become known as ‘The World’s Most Awarded Pub’.

Double Chicken Please: From Pop-Up to Best Bar

There’s nothing unusual about elegant cocktails and delicious food coming together, but there is with Double Chicken Please because of the lengths they’ve taken it to. First though, let’s turn back time to 2017 when this award-winning bar was a travelling pop-up…

More precisely, a bright yellow 1977 Volkswagen minibus, undertaking two tours of the states, notching up 10,000 miles and serving 1,200 cocktails. In the van? Faye Chen and GN Chen. They met in Taiwan working the hospitality scene, before making their own ways (Chan at NYC bar Angel’s Share, and Chen at Speak Low in Shanghai). Reconnecting when Chen arrived on American soil, they began to look for a place of their own… but with real estate at a premium in New York, they struggled.

So… they set off on a road trip, showing off their signature style – famous dishes reimagined in liquid form. Creations like Red Eyed Gravy, Beet Salad, and French Toast remain on the menu today at their Lower East Side bar. After a difficult mid-pandemic teething stage, Double Chicken Please opened with two distinct spaces; The Back Room and The Front Room.

The Front Room, a casual, industrial space offers quick-serve numbered cocktails, each listed on felt letter boards on a gallery wall: some familiar, like #1 with Aperol, passion fruit, sparkling wine, and soda, and some with more peculiar inclusions such as #9, with White Rum, Pineapple, Coconut and Curry. Signature chicken sandwiches created by highly skilled and experienced Mark Chou are also available, such as Mochi Donut with pickled pineapple, habanero, cilantro and strawberry. The menu continues like this, a whirlwind of the familiar and the unusual combined, embracing Asian flavours, cultural diversity, and experimentation.

Head to the Back Room, or The Coop, for a larger, more luxurious experience that retains the comforting warmth of every corner of Double Chicken Please. Here, drinkers can indulge in the bar’s heart and soul, with innovations like Mango Sticky Rice (rum, coconut, mango, cold-brew, coconut, sticky rice pu’er tea and wakame), Cold Pizza (tequila, Parmigiano Reggiano, burnt toast, tomato, basil, honey and egg white), and NY Beet Salad (gin, beet, pineapple, cranberry, mascarpone, yoghurt). Everywhere you look, Chan & Chen have reimagined culinary dishes with delicious cocktail outcomes.

In a city known for its bars, perhaps more than any other on Earth, Double Chicken Please has managed to stand out, earning a 6th place spot on the World’s 50 Best Bars list, earning the Highest New Entry Award for 2022. Despite the industrial décor, peculiar and often savoury flavour combos, food merged with drinks and two separate rooms, there is a universal warmth, and joy running through every part of Double Chicken Please. ‘The bar is designed to make people happy’ says Chan, and they’ve certainly done that.
