Although most usually associated with Islay Scotch, peat smoke and whisky has a long history at The Glenturret as it used to feature heavily in distilling traditions, with records showing peat being dug from Octhertye Estate in the early 1800s. Nowadays, The Glenturret are in the lucky, rare position of being able to produce both peated and non-peated spirits at different times of the year from the same small stills. This 10 year old single malt version is incredibly mellow and sweet with an elegant smokiness that does not blow your head off!

Helena’s Choice: A Smokin’ Word


I love a sweet and sour cocktail and this one feels so deliciously retro! It’s a new take on the Last Word cocktail and was invented by Kyle Jamieson from Panda & Sons in Edinburgh. The smokiness of the peat does something fascinating with the cherry and it’s one that looks as good as it tastes. Simply shake all the ingredients together with ice, then strain into a coupe glass. Garnish with cocktail cherries.

35ml The Glenturret 10 Years Old Peat Smoked

20ml Yellow Chartreuse

20ml Maraschino Cherry Liqueur

20 ml lemon juice


Aidy’s Choice: Smoky Whisky Sour


You know me and my sours. I love them! Often I like to experiment with fruit and garnishes but sometimes, simplicity is what’s called for. This is a classic whisky sour with no frills, using egg white to get that silky texture. Firstly, add all the ingredients into the shaker with ice and shake vigorously. Then strain back into the shaker to remove the ice and have a vigorous dry shake to fluff up the egg white. Strain into an old fashioned glass and garnish with a lemon or orange twist.

60ml The Glenturret 10 Years Old Peat Smoked

30ml Fresh Lemon Juice

25ml Sugar Syrup

1 Egg white

2 Dashes Angostura bitters


Colin’s Choice: Stirred Smoky Martini


Those of you who know me know I'm a bit of a whisky purist, but I can’t resist a smoky, dry Martini. It uses a dash of peated Scotch whisky with the gin instead of Vermouth, so it is particularly dry and aromatic. I’d go for a large splash of whisky around 15ml but play around to suit your taste. Simply Stir the gin, whisky and a little ice together in a glass (stirring keeps it crystal clear and smooth), then strain and pour into a chilled martini glass. Garnish with your lemon or orange twist.

Helena’s Choice: Vanilla Highball


Highballs are back as new generations discover whisky in an accessible way before hitting the stuff neat. The Vanilla highball is a long serve that’s incredibly simple to make at home. Here’s a refreshing version with a twist to bring out those beautiful sweet spice flavours from the wood casks: Simply pour the whisky into a highball glass topped up with ice, splash in some vanilla bitters (to taste) and top up with cream soda. Garnish with a slice of orange or a vanilla pod if you have one.

Aidy’s Choice: Pineapple Whisky Sour


Whisky cocktails don’t have to be heavy, dark affairs; there are tonnes of lighter, fruity options too. Here’s a particular serve that I consider my TGIF drink (Thank God It’s Friday!) or quite frankly, any time I’m just in the mood for a little pick me up! Method: place the sugar, whisky, lemon juice, pineapple juice and egg white into a cocktail shaker filled with ice and shake vigorously for 15-30 seconds. Strain into an old fashioned cocktail glass and serve.

Pineapple Whisky Sour

Recipe

60ml The Glenturret Triple Wood 

25ml Lemon juice 

25ml Pineapple juice 

1 egg white

2 tsp Caster sugar

Pineapple wedge to garnish (optional)

Colin’s Choice: The Rob Roy


Here’s one for fans of a classic Manhattan but with a Scotch whisky twist! Originally created in 1894 at New York’s Waldorf Astoria Hotel and was named after the opera Roby Roy that was premiering in New York at the time. Method: Stir all the ingredients together in a mixing glass with ice, then pour into the coup. Garnish with an orange twist or a maraschino cherry.

Long, light and refreshing, this is a super simple, perfect highball serve that showcases the light vibrancy of Fettercairn 12 Year Old and accentuates the tropical distillery character derived from Fettercairn’s unique, copper cooling ring distillation process.

Ingredients
25ml Fettercairn 12 Year Old whisky
25ml Coconut Water
4 Dashes of Pineapple and Star Anise Bitters
Top with Soda Water
Garnish: Dried pineapple and flamed star anise
Glass: Highball Glass

Method
For the perfect highball and for any occasion, simply build all Ingredients in the highball glass, then garnish with dried pineapple and flamed star anise.

Fettercairn Distillery, founded in 1824, was one of the very first licensed distilleries in Scotland. Located in a small village in Aberdeenshire under the Grampian foothills in the Howe of Mearns, this distillery got a new lease of life in the 1950s and is now creating exciting new expressions using their stocks of well-aged whiskies.

Jura Craighouse Rocks

The Isle of Jura lies sixty miles away from the mainland of Scotland’s western coast. It has a harsh, cool climate, but an exceptionally warm community, all focused around the Island’s one whisky distillery in Craighouse. Founded originally in 1810, the distillery fell into ruin at the end of the 19th century but was entirely rebuilt and reopened in 1963 in order to boost the local economy and rebuild the community. It makes whiskies that are characteristically smooth, bright and lively.

This Craighouse rocks cocktail is ideal for post dinner drinks. A twist on an Old Fashioned recipe, the chocolate and the crème de poire really highlight the nutty and green fruit flavours of the Jura 12 Year Old whisky.  

 Ingredients

40ml Jura 12 Year Old Whisky.
10ml Oloroso Sherry
5ml Crème de poire
5ml Sugar syrup (1;1)
Dash of chocolate bitters
Glass: Rocks
Garnish: Lemon twist

Method:
Combine all the ingredients in a mixing glass over ice and stir for one minute to get a slight dilution and chill. Strain into a rocks glass over a large, clear ice block and garnish with a fresh lemon twist.

The Jura Sunset

One of Jura Whisky’s signature serves, this is a simple, beautifully balanced drink that works brilliantly as an arrival drink or an apéritif. Bittersweet and citrussy, the Jura Sunset is ideal for new whisky drinkers.

Ingredients
25ml Jura 10 Year Old Whisky
25ml Apérol
Top with Fever Tree Mediterranean Tonic (or premium tonic water)
Glass: Copa glass or red wine glass
Garnish: Orange wedge 

Method
You can make this drink in the glass itself. Simply add the Jura whisky, Apérol and tonic into a glass that already has crushed ice in and stir. Garnish with a fresh orange wheel or wedge.

The Dalmore Old Fashioned

Not far from Inverness overlooking the famous ‘Black Isle’, sits The Dalmore distillery. These special casks have  previously held exceptional, old sherries such as Matusalem Oloroso sherry and it is these casks that add to the quintessential Dalmore style.

The Old Fashioned needs no introduction as a cocktail and the beauty of this classic drink really  is its simplicity! Think of fruit cake with shaving of dark chocolate and orange peel on top. One for those cosy nights by the fire, for sure.

Ingredients
50ml The Dalmore 12 Year Old Whisky
25ml Sugar syrup
Dash Orange bitters
Glass: Rocks glass
Garnish: Fresh orange twist

Method
Find a rocks glass or a tumbler, add ice and then pour all the ingredients in. Stir well until chilled and slightly diluted. Garnish with an orange wheel.

The Dalmore Mackenzie Highball

If you’re after a long, fruity tipple with a little more depth than usual, you can’t go wrong with the Dalmore Mackenzie Highball. Named after the Mackenzie Clan who became owners of the distillery in 1867, this drink has tangy, refreshing high notes from the raspberry and orange balanced beautifully with the rich, woody, nutty notes from the whisky and port.

Ingredients
50ml The Dalmore Port Wood Reserve Whisky
25ml Tawny port
25ml  Raspberry syrup (or strawberry, fig, plum if easier)
Top up with soda water
Glass: Highball
Garnish: Orange wedge/seasonal fruit
*Feel free to use seasonal substitutes eg.. Plum, fig, strawberry,

Method
Fill a rocks highball glass with ice and add all the wet ingredients. Top up with soda and stir if you prefer. Garnish with the orange wedge or your fruit of choice.

The Robert Burns Cocktail

It is a Scottish tradition to celebrate the poet Robert Burns' birthday on January 25th every year, and whether this drink was named for him or not, it is a fantastic choice for the evening's libation.

The Robert Burns is a classic cocktail that pays tribute to two of Scotland’s finest exports. The drink itself is a delightful, sophisticated mix that builds on the scotch-vermouth combination of a Rob Roy, but the addition of absinthe brings in an intriguing contrasting flavour. Be sure to keep the absinthe to a dash however as it can easily overpower the drink. 

If Absinthe is a bit too much for your taste, there is a variation called the Bobby Burns which swaps the Absinthe for Bénédictine

Add ingredients into a mixing glass with ice, then stir well and strain into a tumbler. Ice and orange twist optional. 

Rusty Nail Cocktail

The Rusty Nail is the ultimate Scotch whisky cocktail. It's a very simple mix of Scotch and Drambuie served on the rocks. This is designed to be a sophisticated, slow-sipping drink, and it's excellent after dinner.

Feel free to choose either blended or single malts, exploring various brands and going as top-shelf as you wish. You may also want to adjust the ratio of the two spirits to fit your taste. 

Ingredients:

  • 45ml Scotch Whisky (Team 3D recommens this GoT Clynelish)

  • 25ml Drambuie

Method:
Simply combine the liquids into a mixing glass and stir well before pouring over ice into a tumbler. 

The Rob Roy

The Rob Roy cocktail was named after an operetta that narrated the story of a great Scottish folk hero who supported the poor. It’s a Scotch version of the classic Manhattan cocktail as the Rob Roy replaces bourbon or rye whisky with Scotch. The Rob Roy ingredients are also similar to that of a classic Old Fashioned, but the Rob Roy recipe uses sweet vermouth instead of sugar syrup for a richer flavour. It is best served by putting the cocktail glass in the freezer to ensure the Rob Roy stays cold as the drink is served without ice. Stirring a Rob Roy cocktail rather than shaking is critical in delicate cocktails with few ingredients, so not to over dilute the drink.

Combine all ingredients into a mixing glass with ice (minus the garnish) and stir well before straining into a cold Nick and Nora or Martini glass. Garnish with a cherry. 


Hot Toddy

A good Hot Toddy has been said to jump-start mornings, cure colds and play furnace on a cold evening. Many people believe that its first use was as a medicinal aid, as alcohol was known to numb pain, while citrus and sugar (or honey) could soothe a sore throat.

This recipe comes from San Francisco bartender Jacques Bezuidenhout and features your choice of whisky, hot water, demerara sugar and a clove-studded lemon peel. Fortunately, the Hot Toddy is very easy to make.

Method:
Grab your favourite mug and heat it with some boiling water. After a minute or two, throw away the water and build your drink in the same mug by combining your spirit with sugar, lemon juice and peel, cloves and more hot water.


Ruby Queen Cocktail

The Ruby Queen recipe was developed by Rob Krueger of Extra Fancy in New York City and although it includes a couple of unusual ingredients, it is quite easy to mix up. You will need to prepare or acquire fresh beetroot juice and take a few minutes to make a fresh honey syrup.

It’s a pleasant surprise when you taste just how well Scotch works against this sweetened vegetable juice. The whisky adds a depth that vodka and gin cannot. It will rival any Bloody Mary you have ever had. 

Ingredients:

  • 45ml Scotch Whisky (Team 3D recommend The Dalmore 12 Year old)

  • 30ml Fresh Red Beetroot Juice

  • 25ml  Honey Syrup 

  • 25ml Fresh Lemon Juice

  • Fresh Dill or Tarragon (Garnish) 

  • Lemon Twist (Garnish) 

Method:
Combine everything except the garnish into a shaker with ice, shake for 30 seconds, then strain and pour into all tall, high-ball style glass. pour and shake like any other drink and you will have a savoury drink that will rival any Bloody Mary.
